PAPUTTU
This is a sweet much relished in the families of South India.

INGREDIENTS:
1 cup semolina made out of rice,1/2 cup whole milk,1/2 cup sugar,1/2 fresh coconut grated, 1/4 teaspoon soda-bi-carb, 15 cardamoms pounded 1/2 teaspoon baking powder, 3/4 cup water,ghee as required. 

METHOD:
Pour milk and water in a dekchi. Put in grated coconut, rice semolina, sugar, soda-bi-carb and the pounded cardamoms. Go on stirring the mixture till the sugar is dissolved completely. Place a fitting lid on the dekchi and let the mixture stand for 2 hours.

Select a deep stainless steel thali and grease it profusely all over with ghee.

Add baking powder to the ready mixture and whisk it vigorously to make it light. Pour it in the thali.

Fill the bottom container half with water. Over this container place the thali. Put the lid on & pressure cook for 6  and half  minutes. Put off the fire. 

When the steam is completely released on its own and the cooker cools down, uncover it.

Remove the thali from the cooker. Let it cool a little. Then cut the Paputtu into desired shapes.

Serve with lumps of butter or home-made ghee.
