KHEER
It is prepared with rice, jackfruit, sweet potatoes, sago, makane, vermicelli and many other things. Of course milk is its main ingredient. Whatever is used the method of its preparation is almostthe same. Here the recipe for rice kheer is given.

INGREDIENTS:
1 cup rice soaked for 3 hours & drained, 2 and half litres milk, 1and half cups sugar, 1 tablespoon good ghee, 10 cardamoms pounded,half teaspoon saffron, some almonds and pistachios, blanched & cut into slivers, 1/4 cup kishmis.

METHOD:
Heat the saffron in a metal bowl on very low fire. When it cools crush it with fingertips.

Place the cooker on fire with ghee in it. When the ghee is heated lower the fire and put in the rice. Fry the rice to a light golden colour. Pour the milk and mix. When the milk starts boiling put the lid on & cook. 

Lettwo whistles come. Then pressure cook for 5 minutes. Put off the fire.

Let the pressure be released on its own.

Uncover and add sugar. Put back the cooker on fire. Keep the fire medium. Go on stirring the kheer till it comes to the desired consistency. While the kheer is getting ready on fire, add almonds, pistachios, cardamoms, kishmis and saffron.

Pour in a serving bowl. Sprinkle a few rose petals & serve hot with puris.
